From what I can see it should carve good. The default carving bit is the 1/16" tapered bit for all patterns. That is unless you change it in the board settings.

I had just done some dog patterns on commision a few weeks back. A portrait and a dog on a hill with sheep in the background etc. I made the dogs kind of stick out in a rounded 3D shape and kind of extruded the fur onto the shape.
I would do this for you on commision. Two hours of work, $15 an hour. I could also put a custom profile boarder on it for an extra $5. Either rectagle or oval.
You would have to send me a high resolution photo and a simple rough sketch of what kind of profile you would want to use. Just a pencil sketch in windows paint would do.

How do I set the depth of the EMBER name? I am planning to use the 60 degree bit to carve the letters but am afraid of going too deep. I am using the centerline feature and set as bold.
On centerline text the CW will set the depth. As long as you input the correct thickness of the board in designer and use a board the correct thickness. If you like I can see what I can do with the pattern. As a MPC I can not make any changes except adding height and draft. If you post the original image you uploaded in the designer or the mpw file I can try to do something in my pattern editor. I also have Corel and the best thing I am not looking for money to help you! As it is it will carve rough, the way you see it in designer will be the way it will carve. By removing some noise and adding some Gaussian blur will smooth it out
