Bit sharpening

I don't think these bit will stay sharp forever. Can they be sharpened?

The carving bit is an endmill type bit designed and tested for hundreds of hours in this application. I'm still using one that I know has over 200 hours on it and still cuts cleanly. They can not be sharpened.

Good to know I have a few dull ones that could use it right now.

Is there any way to tell how many hours are on the machine?

Yes, in the options menu('O' on keypad); it will tell you carving time, on time, servo time, and scanning time. Look in the users manual for more detail.
