is it possible to cut out a shape and round the edge over with the cutting bit, or do you need a router bit?
I believe that you need a router bit for that.

Technically you could probably do it with a carving bit. But it wouldn't be the best finish, and it would take alot of time off your warranty. A round-over bit is the best way to do it in the CW. But overall I think a bearing round-over on your router table is actually your best option. It takes less time off the machine and should take less time overall.
