Any one tried carving on Mesquite wood ?

No, but I've smoked ribs with it once or twice. I still prefer apple for smoking.

Apple isn't to bad for a brisket at home if you use some apple brandy on it. But mesquite will give you a better smoke ring. And if you are entering a cook off, you best have at least a 3/4" smoke ring for any hope of even placing.

I have used some mesquite and the first chipped on the letters. The second was a raster carving and it came out quite nice . I have about 50 bdft of mesquite just haven't tried any more lately . I do love mesquite I used to turn a lot on the lathe.

Well if the carving turns out bad you can always recycle on the BBQ pit.

In the end I prefer Memphis-style. I have a pretty good story about it, but I don't want to highjack the thread (again).
