I saw this video of a guy doing artistic work with drywall plaster.

Is there any reason something like this couldn't be done with the carvewright using foam then gluing it to the wall and putting a light coat of drywall plaster over it? Is there anyone who has tried something like this?

What would be the best type of foam to use? Any other thoughts or suggestions?

That technique is used a lot for exterior facades on commercial buildings with foam moldings and efface (synthetic stucco). I think sign foam would be the best but I have not carved any so I could not really say.
