I would like to create a head or bust where it it is cut in layers and then reassembled

If by "create" you mean making one yourself then you would need some 3D modeling software to do it. If you are just wanting to try importing and slicing an existing model with the STL software you can find lots of 3D models already made. There are lots of sites out there with free models.

Meshlab works well with many formats...

I've done a few "how to" videos showing how to find 3d models-- here is one showing how I do it
