It is my understanding that the jig is to feed the wood through when you cut out large peices, or if carving on both sides. When cutting out large peices can I use a peice of peg board screwed to the back of the board?(As long as they are not where I'm cutting.)

The jig needs to be solid. It must hold the workpiece securly in place and provide a bearing surface for the board position sensor (little roller in front) and slide nicely between the guides. The machine needs at least 3/4" of solid wood both front and back. I made a jig out of 3/4" plywood, with 1"x4"'s (or same thickness as your stock) mounted at both ends of the stock to ensure that there is something (end pieces or stock itself) under the rollers. Everything is held inplace from the top with councounter sunk screws. There is a pic somewhere on here of it.
