Using the probe to duplicate double sided items

I have been asked to duplicate a leg from an antique plant stand. On the surface it looks like a fairly simple piece to carve, however, it is double sided (will have to be flipped to carve the back side).

Does anyone have experience using the probe for this, or carving two sided items in general?

I'd scan exactly 1/2 of the leg, and after making it a pattern, place the pattern on the front and then backside of the virtual board - make it a two sided carve.

Watch your depths, the machine can only carve to just under 1".
